How to do

I’ve mixed the flour, 600 g water, salt and yeast in the dough machine (kitchen aid) for five minutes at level 4 and for five minutes at level 8.
While mixing it at level 6, I added olive oil just like you are adding it to a salad, waited a little bit and then added 150 g water.
I’ve put the dough in a pot covered with flour and kept it in the fridge overnight.
I removed the dough the next day and kept it in the room temperature for 30 minutes.
Then I folded the dough once (right end to the center and left end to the right).
I waited for 30 minutes, then I folded the dough one more time.
I waited for another 20 minutes and then I cut the dough in portions of 200 g.
I kept these parts over a linen covered with flour and waited for 40 minutes more. Then I baked it in the oven for 30 minutes at 270 degrees until it turned a nice, yummy golden color. Enjoy!
